Sweet Potato and White Bean Burger

Ingredients
  

  • 1 cup cooked and mashed sweet potato (about 1 sweet potato)
  • 1 can (15 oz) white beans, drained and rinsed
  • 1/2 cup breadcrumbs (gluten-free if needed)
  • 1/4 cup finely chopped red onion
  • 1 1/2 teaspoons garlic granules
  • 1/4 cup nutritional yeast (optional)
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons lemon juice
  • olive oil for cooking
  • salt and pepper to taste
  • Burger buns
  • Optional Toppings: Lettuce, tomato slices, onion rings, avocado slices, and condiments of your choice

Instructions
 

  • Preheat your oven to 375°F (190°C) and then line a baking sheet with parchment paper.
  • Combine all the ingredients i(mashed sweet potatoes, white beans, breadcrumbs, red onion, minced garlic, nutritional yeast, chopped parsley, lemon juice, salt, and pepper) in a large mixing bowl. Mix well until all the ingredients are evenly incorporated.
  • From the mixture make 4 to 6 balls, depending on your desired burger size. Then shape each portion into a patty and place them onto the prepared baking sheet.
  • Lightly brush or drizzle the patties with a little olive oil to help them crisp up during baking.
  • Bake the patties in the preheated oven for about 20-25 minutes, flipping them halfway through, until they are golden brown and cooked through.
  • While the patties are baking, you can toast the burger buns in a toaster or on a grill.
  • Once the patties are done, assemble your vegan sweet potato and white bean burgers with your favorite condiments and toppings.
