Tabbouleh Salad
Tabbouleh salad is a beloved dish of Middle Eastern origin that has become popular around the world for its fresh and flavorful ingredients. - 1 cup bulgur wheat
- 2 cups boiling water
- 1/4 cup fresh lemon juice
- 1 cup extra-virgin olive oil
- 1 - 2 bunches fresh parsley, chopped
- 1/4 cup mint leaves, chopped (optional)
- 1 cucumber, peeled and chopped
- 1 cup tomatoes, diced or 1 pint cherry tomatoes, quartered
- 1 green onion, finely sliced (optional)
- salt and pepper to taste
Place the bulgur wheat in a large bowl and pour in the boiling water. Cover with a lid or plastic wrap and let sit for about 30 minutes, or until the water is absorbed and the wheat is tender.
In a small bowl, whisk together the lemon juice and olive oil.
Once the bulgur wheat is ready, fluff it up with a fork and add in the chopped parsley, mint, cucumber, tomatoes, and green onion.
Pour the lemon juice and olive oil mixture over the top of the salad and toss everything together until well combined.
Season with salt and pepper to taste.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving.Enjoy your tabbouleh!
