Ingredients
  

  • 1 cup bulgur wheat
  • 2 cups boiling water
  • 1/4 cup fresh lemon juice
  • 1 cup extra-virgin olive oil
  • 1 – 2 bunches fresh parsley, chopped
  • 1/4 cup mint leaves, chopped (optional)
  • 1 cucumber, peeled and chopped
  • 1 cup tomatoes, diced or 1 pint cherry tomatoes, quartered
  • 1 green onion, finely sliced (optional)
  • salt and pepper to taste

Instructions
 

  • Place the bulgur wheat in a large bowl and pour in the boiling water. Cover with a lid or plastic wrap and let sit for about 30 minutes, or until the water is absorbed and the wheat is tender.
  • In a small bowl, whisk together the lemon juice and olive oil.
  • Once the bulgur wheat is ready, fluff it up with a fork and add in the chopped parsley, mint, cucumber, tomatoes, and green onion.
