Tofu Scramble with Veggies
This recipe is for a delicious and healthy vegan tofu scramble with veggies. It's packed with protein, fiber, and nutrients and is perfect for a quick and easy breakfast, brunch or lunch. This Tofu Scramble with Veggies makes an extra special breakfast or addition to brunch.
- 1 block of frim tofu
- 1 tablespoon olive oil
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- salt and peper to taste
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 1/4 onion, diced
- Handful of spinach (optional)
Drain and press the tofu to remove excess water..
In a skillet, heat olive oil over medium heat.
Add diced red bell pepper, green bell pepper, and onion to the skillet. Cook until the vegetables are tender.
Crumble the tofu into the skillet and stir to combine with the vegetables.
Add turmeric, garlic powder, onion powder, salt, and pepper. Stir to combine.
Cook the tofu scramble for 5-7 minutes or until heated through.
Add a handful of spinach to the skillet and stir until wilted.
