Tofu Scramble with Veggies

This recipe is for a delicious and healthy vegan tofu scramble with veggies. It's packed with protein, fiber, and nutrients and is perfect for a quick and easy breakfast, brunch or lunch. This Tofu Scramble with Veggies makes an extra special breakfast or addition to brunch.

Ingredients
  

  • 1 block of frim tofu
  • 1 tablespoon olive oil
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • salt and peper to taste
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1/4 onion, diced
  • Handful of spinach (optional)

Instructions
 

  • Drain and press the tofu to remove excess water..
  • In a skillet, heat olive oil over medium heat.
  • Add diced red bell pepper, green bell pepper, and onion to the skillet. Cook until the vegetables are tender.
  • Crumble the tofu into the skillet and stir to combine with the vegetables.
  • Add turmeric, garlic powder, onion powder, salt, and pepper. Stir to combine.
  • Cook the tofu scramble for 5-7 minutes or until heated through.
  • Add a handful of spinach to the skillet and stir until wilted.
  • Serve and enjoy your vegan tofu scramble with veggies!
