Vegan Apple Cranberry Crisp

Ingredients
  

For the filling:

  • 5 apples, peeled and sliced or chopped
  • 3/4 cup fresh or frozen cranberries (use 1 cup if like more tart)
  • 1/2 cup sugar (or maple syrup or, agave)
  • 2 tablespoon cornstarch or arrowroot
  • 1/4 cup water (or enough to make the cornstarch blend well)
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract (optional)
  • pinch of salt (optional)

For the topping:

  • 1 1/2 cups oats
  • 1/4 cup all-purpose flour (or use a gluten free alternative)
  • 1/2 cup brown sugar or coconut sugar
  • 1/4 cup vegan butter or coconut oil (melted)
  • 1/2 teaspoon ground cinnamon
  • pinch of salt (1/8 teaspoon or less)
  • 1/2 cup walnuts or pecans, finely chopped (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease an 8x8-inch (20x20 cm) baking dish.
  • In a large mixing bowl, combine the sliced apples and cranberries.
  • In a separate small bowl, mix together the maple syrup, cornstarch, cinnamon, lemon juice, water, and salt. Pour this mixture over the apples and cranberries and toss until the fruit is evenly coated.
  • Transfer the fruit mixture to the greased baking dish, spreading it out evenly.
  • In another mixing bowl, prepare the oat topping. Combine the rolled oats, flour, brown sugar (or coconut sugar), melted vegan butter (or coconut oil), cinnamon, and a pinch of salt. Mix until the ingredients are well combined.
