- 1 head broccoli, chopped (about 4 cups)
- 1 onion, diced
- 2 - 3 cloves garlic, minced
- 2 cups frozen peas
- 1/4 cup parsley, chopped
- 4 cups vegetable broth
- 2 tablespoons coconut aminos (optional)
- 1 teaspoon dried thyme
- 1 tablespoon olive
- 2 tablespoons lemon juice
- pinch of cayenne (optional)
- salt and pepper, to taste
Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until softened, about 5 minutes.
Add the chopped broccoli, frozen peas, chopped parsley and minced garlic to the pot, and cook for another 5 minutes, stirring occasionally.
Pour in the vegetable broth, coconut aminos, pinch of cayenne, and add the dried thyme. Bring the soup to a boil, then reduce the heat to low and simmer. Cover and let the soup simmer for 25 minutes, or until the broccoli and peas are tender.
Once the vegetables are cooked, remove the pot from the heat. Use an immersion blender to blend the soup until smooth and creamy. Alternatively, transfer the soup to a blender and blend in batches until smooth.
Season the soup with salt, pepper, and lemon juice, adjusting to taste as needed.
Serve the vegan broccoli pea soup hot, topped with optional garnishes such as vegan sour cream, fresh herbs, or toasted nuts/seeds.
