Vegan Broccoli Pea Soup

Ingredients
  

  • 1 head broccoli, chopped (about 4 cups)
  • 1 onion, diced
  • 2 - 3 cloves garlic, minced
  • 2 cups frozen peas
  • 1/4 cup parsley, chopped
  • 4 cups vegetable broth
  • 2 tablespoons coconut aminos (optional)
  • 1 teaspoon dried thyme
  • 1 tablespoon olive
  • 2 tablespoons lemon juice
  • pinch of cayenne (optional)
  • salt and pepper, to taste

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until softened, about 5 minutes.
  • Add the chopped broccoli, frozen peas, chopped parsley and minced garlic to the pot, and cook for another 5 minutes, stirring occasionally.
  • Pour in the vegetable broth, coconut aminos, pinch of cayenne, and add the dried thyme. Bring the soup to a boil, then reduce the heat to low and simmer. Cover and let the soup simmer for 25 minutes, or until the broccoli and peas are tender.
  • Once the vegetables are cooked, remove the pot from the heat. Use an immersion blender to blend the soup until smooth and creamy. Alternatively, transfer the soup to a blender and blend in batches until smooth.
  • Season the soup with salt, pepper, and lemon juice, adjusting to taste as needed.
  • Serve the vegan broccoli pea soup hot, topped with optional garnishes such as vegan sour cream, fresh herbs, or toasted nuts/seeds.
