Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, whisk together the flour, baking soda, and salt until well combined.
In a separate large bowl, combine the melted coconut oil and brown sugar. Stir until the sugar is dissolved and the mixture is smooth.
Add the vegan milk and vanilla extract to the wet mixture and mix well.
Gradually add the dry ingredients to the wet ingredients, stirring until a thick cookie dough forms
Fold in the vegan chocolate chips until they are evenly distributed throughout the dough
Scoop about 1 tablespoon of dough per cookie and roll it into a ball. Place the cookie dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden brown.
Remove the baking sheet from the oven and let the cookies cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.
Once cooled, the vegan chocolate chip cookies are ready to be enjoyed!
