Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/3 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/8 cup unsweetened plant based milk (add more if needed)
  • 1 cup vegan chocolate chips

Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a mixing bowl, whisk together the flour, baking soda, and salt until well combined.
  • In a separate large bowl, combine the melted coconut oil and brown sugar. Stir until the sugar is dissolved and the mixture is smooth.
  • Add the vegan milk and vanilla extract to the wet mixture and mix well.
  • Gradually add the dry ingredients to the wet ingredients, stirring until a thick cookie dough forms
  • Fold in the vegan chocolate chips until they are evenly distributed throughout the dough
  • Scoop about 1 tablespoon of dough per cookie and roll it into a ball. Place the cookie dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  • Remove the baking sheet from the oven and let the cookies cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Once cooled, the vegan chocolate chip cookies are ready to be enjoyed!
