  • 1/4 cup cornstarch
  • 1/4 cup cocoa powder
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 cups non-dairy milk (such as almond, soy, or coconut milk)
  • 1 teaspoon vanilla extract

Instructions
 

  • In a medium saucepan, whisk together the cornstarch, cocoa powder, sugar, and salt.
  • Slowly whisk in the non-dairy milk until the mixture is smooth and well combined.
  • Place the saucepan over medium heat and cook, whisking constantly, until the mixture thickens and begins to boil.
  • Reduce the heat to low and continue to cook, whisking constantly, for an additional 2-3 minutes.
  • Remove the saucepan from the heat and stir in the vanilla extract.
  • Pour the pudding into individual serving dishes and chill in the refrigerator for at least 2 hours, or until set.
