- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup coconut oil or vegan butter, melted
- 1/4 cup plant based milk (or water)
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 2/3 cup raisins
Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
In a medium mixing bowl, whisk together the rolled oats, flour, baking powder, baking soda, salt, and cinnamon until well combined.
In a separate large mixing bowl, whisk together the melted coconut oil or vegan butter, brown sugar, granulated sugar, unsweetened applesauce, plant based milk, and vanilla extract until smooth and creamy.
Add the dry ingredients to the wet ingredients and mix until just combined.
Fold in the raisins.
Using a cookie scoop or spoon, drop balls of dough onto the prepared baking sheet.
Bake for 12 - 15 minutes or until edges are golden. The cookies will still be soft in the center but will firm up as they cool.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
