Heat olive oil in a large pot over medium heat.
Add chopped onion, minced garlic, and a pinch of salt. Cook until onion is translucent.
Add diced tomatoes, coconut milk, vegetable broth, dried basil, salt, and pepper to the pot.
Bring to a boil, then reduce heat and let simmer for 20 minutes.
Use an immersion blender or transfer soup to a blender to puree until smooth.
