This vegan tomato soup is a comforting and flavorful dish that's perfect for any time of year. It's made with tomatoes, coconut milk, vegetable broth, aromatic herbs and spices, and blended until smooth and creamy. This recipe is easy to make, healthy, and satisfying.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 14.5 oz cans diced tomatoes
  • 1 13.5 oz can full-fat coconut milk
  • 2 cups vegetable broth
  • 1 tablespoon dried basil
  • salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion, minced garlic, and a pinch of salt. Cook until onion is translucent.
  • Add diced tomatoes, coconut milk, vegetable broth, dried basil, salt, and pepper to the pot.
  • Bring to a boil, then reduce heat and let simmer for 20 minutes.
  • Use an immersion blender or transfer soup to a blender to puree until smooth.
  • Serve hot and enjoy!
