Vegan French Onion Dip

- 1 cup vegan sour cream (store bought or homemade)
- 1 large onion, finely chopped
- 1 teaspoon coconut aminos or tamari
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon smoked paprika (optional for smoky flavor)
- chopped chives, green onion, or parsley for garnish (optional)
In a large skillet, heat the olive oil over medium-low heat. Add the finely chopped onion and cook slowly, stirring frequently, until the onions become soft, golden brown, and caramelized. This will take about 20 minutes.
In a mixing bowl, combine the vegan sour cream, garlic powder, onion powder, smoked paprika (if using), coconut aminos and salt and pepper. Mix well until all the ingredients are thoroughly combined.
Once the onions are caramelized, let them cool for a few minutes. Then, add them to the dip base and gently fold them in.
Cover the bowl and refrigerate the dip for at least 1 hour to allow the flavors to meld and the dip to cool.
Before serving, you can garnish the dip with fresh chives, green onions or parsley for a burst of color and extra flavor. Additionally, you can stir a bit in and add a bit on top.
