- 4 potatoes, peeled and cubed. (to make 4 cups of mashed potatoes)
- 1 cup all-purpose flour (plus extra for dusting)
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons vegan butter or oil, plus more for frying
Use previously cooked mashed potatoes or place the cubed potatoes in a large pot of water and bring to a boil. Cook until the potatoes are tender, about 20 to 25 minutes. Drain the potatoes and mash them until smooth. This should make about 4 cups. Allow them to cool slightly.
In a large mixing bowl, combine flour and baking powder. Then add the mashed potatoes, butter, and salt. Mix until a dough forms.
Turn the dough out onto a lightly floured surface and knead gently until smooth.
Divide the dough into four equal portions and shape each portion into a ball.
On a floured surface, roll out each ball of dough into a circle, about 1/4 inch thick. Then using a sharp knife, cut into quarters or into 6 pieces. They will be triangle in shape
Heat a skillet or griddle over medium heat and grease with vegan butter or oil.
Cook the farls in the skillet for 3 - 4 minutes on each side, or until golden brown and cooked through.
Remove the farls from the skillet.
Serve the vegan Irish potato farls warm, with vegan butter or your favorite topping.
