Ingredients

  • 4 cups mashed potatoes (about 3 – 4 potatoes, small cubed)
  • 1 cup all-purpose flour (plus extra for dusting)
  • ½ teaspoon salt
  • 2 tablespoons vegan butter or oil, (plus more for frying)

Instructions

  • Place the cubed potatoes in a large pot of water and bring to a boil. Cook until the potatoes are tender, about 20 -25 minutes.
  • Drain the potatoes and mash them until smooth. This should make about 4 cups. Allow them to cool slightly.
  • In a large mixing bowl, combine the mashed potatoes, flour, butter and salt. Mix until a dough forms.
  • Turn the dough out onto a lightly floured surface and knead gently until smooth.
  • Divide the dough into four equal portions and shape each portion into a ball.
  • On a floured surface, roll out each ball of dough into a circle, about 1/4 inch thick. Then using a sharp knife, cut into quarters or into 6 pieces. They will be triangle in shape
  • Heat a skillet or griddle over medium heat and grease with vegan butter or oil.
  • Cook the farls in the skillet for 4 – 5 minutes on each side, or until golden brown and cooked through.
  • Remove the farls from the skillet.
  • Serve the vegan Irish potato farls warm, with vegan butter or your favorite topping.
