Vegan Lentil Vegetable Soup

Ingredients
  

  • 1 cup brown lentils, rinsed and drained
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 potatoes, diced
  • 3 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon thyme
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 1/2 cups vegetable broth
  • 1 1/2 cups chopped spinach or kale
  • 1 14.5 oz can diced tomatoes
  • salt and pepper to taste

Instructions
 

  • Heat the oil in a large pot over medium heat.
  • Add the onion, garlic, carrots, and celery and cook until the vegetables are softened, about 5 - 7 minutes.
  • Stir in the cumin, smoked paprika, thyme, and cayenne (if using) and cook for 1 minute.
  • Add the lentils, broth, and tomatoes and bring to a boil.
  • Reduce the heat to low, cover, and simmer until the lentils are tender, about 30-35 minutes.
  • Stir in the kale or spinach and cook until wilted, about 5 minutes.
  • Season with salt and pepper to taste, and serve hot. Enjoy!
