- 8 - 10 corn tortillas
- 1 pound mushrooms, sliced
- 1 tablespoon olive oil
- 1/2 onion, diced
- 2 garlic cloves, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika (or smoked paprika)
- salt and pepper to taste
- Juice of 1 lime
- Toppings: diced avocado, chopped cilantro, salsa, and lime wedge.
- (optional toppings) vegan sour cream, diced tomatoes
Heat olive oil in a pan over medium-high heat. Add onions and garlic and cook until softened.
Add sliced mushrooms and season with chili powder, cumin, paprika, salt, and pepper. Cook until mushrooms are tender, about 7-10 minutes.
Squeeze lime juice over the mushrooms and stir to combine.
