Vegan Mushroom Tacos

Ingredients
  

  • 8 - 10 corn tortillas
  • 1 pound mushrooms, sliced
  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika (or smoked paprika)
  • salt and pepper to taste
  • Juice of 1 lime
  • Toppings: diced avocado, chopped cilantro, salsa, and lime wedge.
  • (optional toppings) vegan sour cream, diced tomatoes

Instructions
 

  • Heat olive oil in a pan over medium-high heat. Add onions and garlic and cook until softened.
  • Add sliced mushrooms and season with chili powder, cumin, paprika, salt, and pepper. Cook until mushrooms are tender, about 7-10 minutes.
  • Squeeze lime juice over the mushrooms and stir to combine.
  • Warm tortillas in a separate pan or microwave.
  • Assemble tacos by placing mushrooms on the tortillas and adding desired toppings.
