Vegan Roasted Garlic Mashed Potatoes

Ingredients
  

  • 2 pounds potatoes, peeled and cubed
  • 1 head of garlic
  • 1/2 cup plant-based milk
  • 1/4 cup vegan butter
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 400°F.
  • Cut off the top of the garlic head, drizzle with olive oil, and wrap in aluminum foil.
  • Roast garlic for 30-40 minutes or until cloves are soft and golden brown.
  • Meanwhile, cook the potatoes in salted boiling water until tender.
  • Drain the potatoes and mash them with a potato masher or fork.
  • Squeeze the roasted garlic cloves out of their skins and add them to the mashed potatoes.
  • Add milk, butter, salt, and pepper to the mashed potatoes and stir until everything is well combined.
