For the pizza dough:
- 1 lb. (about 450g) pizza dough (store-bought or homemade)
- cornmeal or flour for dusting
For the vegan spinach artichoke dip topping
- 2 cups frozen chopped spinach, thawed and drained
- 1 14 oz artichoke hearts, drained and chopped
- 1 cup vegan cream cheese
- 1/4 cup vegan mayonnaise
- 1/2 cup nutritional yeast or vegan parmesan
- 1/4 cup chopped green onions
- 2 cloves garlic, minced
- salt and pepper to taste
- 1 cup vegan mozzarella cheese, shredded
- red pepper flakes (optional)
Preheat your oven according to the pizza dough instructions (usually around 450°F/230°C).
Roll out the pizza dough on a lightly floured or cornmeal-dusted surface to your desired thickness.
In a mixing bowl, combine the thawed and drained spinach, chopped artichoke hearts, vegan cream cheese, vegan mayonnaise, nutritional yeast, green onions, minced garlic, salt, and pepper. Mix until well combined.
Spread the spinach artichoke dip evenly over the rolled-out pizza dough, leaving a small border around the edges.
Sprinkle the vegan mozzarella cheese over the top of the spinach artichoke dip.
Follow the pizza dough instructions for baking or bake for approximately 15-20 minutes, or until the crust is golden and the cheese is melted and bubbly.
Once out of the oven, sprinkle red pepper flakes and fresh chopped parsley for an extra kick and freshness. Slice and serve immediately.
