- 2 cups grated zucchini (about 2 medium zucchinis)
- 1 cup fresh or frozen corn kernels
- 1/4 cup chopped scallions
- 1 1/4 cup all purpose flour (chickpea flour for gluten free version)
- 1 teaspoon baking powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 cup non-dairy milk (such as almond or soy milk)
- 1 tablespoon ground flax or chia (mixed with 3.5 tablespoons of water for egg replacement)
- 1/4 teaspoon salt & pepper (to taste)
