White Bean Dip with Sundried Tomatoes in Marinade

This vegan White Bean Dip with Sundried Tomatoes in Marinade is a mouthwatering and flavorful dish. The dip combines the creaminess of white beans with the tangy sweetness of sundried tomatoes. Ingredients
  

For the white bean dip

  • 1 15 oz can of white beans (cannellini or navy beans), drained and rinsed
  • 2 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons tahini
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon choose seasonings (cumin + smoked paprika) or (basil + rosemary) or (thyme + nutritional yeast)
  • salt and pepper to taste

For the sundried tomato in marinade

  • 1/2 cup sundried tomatoes, chopped
  • 1/4 cup chopped nuts or seeds (such as walnuts, almonds, pine nuts, toasted pumpkin seeds, or sunflower seeds
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons balsamic or coconut vinegar
  • 2 tablespoons extra-virgin olive oil
  • salt and pepper to taste

Instructions
 

  • In a food processor or blender, combine the white beans, minced garlic, lemon juice, tahini, olive oil, cumin, salt, and pepper. Blend until smooth and creamy, scraping down the sides as needed.
  • Transfer the white bean dip to a serving bowl.
  • In a separate bowl, mix together the chopped sundried tomatoes, chopped nuts, chopped basil, balsamic vinegar, olive oil, salt, and pepper. Stir to combine.
  • Spoon the sundried tomato marinade mixture over the top of the white bean dip in the serving bowl.
  • Serve the vegan white bean dip with sundried tomatoes and chopped nuts as a delicious and flavorful appetizer or snack.
  • You can serve it with sliced vegetables, crackers, or toasted bread for dipping.
