1 Vegan Summer Pasta Salad garnished with greens and a half peach

SUMMER PASTA SALAD

INGREDIENTS

  • 2 c large shell pasta
  • ¼ med. Onion, chopped
  • ½ carrot, finely shredded
  • ½ c sweet pea
  • 1 recipe of tofu “Miracle Whip” (see recipe on page)

INSTRUCTIONS

Cook shell pasta for 20 minutes. Drain completely. Transfer into a mixing bowl. Add onion, carrot, sweet peas and tofu miracle whip. Mix well. You may chill it before serve. Delicious!

TOFU “MIRACLE WHIP”

INGREDIENTS

  • 1 pkg tofu, firm, Mori-Nu silken
  • 2 T soy milk powder
  • 2 T lemon juice
  • ½ tsp onion powder
  • 1 tsp sea salt
  • 2 T vegetable oil
  • ¼ tsp garlic powder
  • 2 T turbinado sugar

INSTRUCTIONS

TOFU MIRACLE WHIP”: Blend all ingredients until smooth.
