Ingredients

  • 3 cups rolled oats (gluten-free if needed)
  • 1 cup pecans, roughly chopped
  • ½ cup pure maple syrup
  • cup melted coconut oil (or other vegetable oil)
  • 1 teaspoon pure vanilla extract
  • 1 ½ teaspoons ground cinnamon
  • ¼ teaspoon salt
  • ½ cup unsweetened shredded coconut
  • ½ cup chopped walnuts, sliced almonds, sunflower seeds or raw pumpkin seeds (optional)
  • ½ cup dried cranberries or raisins (optional)

Instructions

  • Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper.
  • In a large mixing bowl, combine the rolled oats, chopped pecans, shredded coconut, and other nuts or seeds – if using. Stir to mix well.
  • In a separate bowl, whisk together the maple syrup, melted coconut oil, vanilla extract, ground cinnamon, and salt until well combined.
