- ¼ cup vegan butter or olive oil
- 1 large onion, chopped
- 3 celery stalks, chopped
- 3 – 4 cloves garlic, minced
- ½ cup chopped fresh parsley
- 3 cups vegetable broth
- 1 tablespoon poultry seasoning
- 1 teaspoon dried sage
- 1 teaspoon dried thyme
- ¾ teasppon dried rosemary
- salt and pepper to taste
- 1 cup mushrooms, chopped (optional)
- ½ cup nuts, chopped- pecans or walnuts (optional)

- Spread the cubed bread on a baking sheet and bake for 10 – 15 minutes, or until bread is dry and slightly crispy. Remove from the oven and set it aside.
