Maple Pecan Granola Recipe
Ingredients
- 3 cups rolled oats (gluten-free if needed)
- 1 cup pecans, roughly chopped
- 1/2 cup pure maple syrup
- 1/3 cup melted coconut oil (or other vegetable oil)
- 1 teaspoon pure vanilla extract
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsweetened shredded coconut
- 1/2 cup chopped walnuts, sliced almonds, sunflower seeds or raw pumpkin seeds (optional)
- 1/2 cup dried cranberries or raisins (optional)
Instructions
- Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, chopped pecans, shredded coconut, and other nuts or seeds – if using. Stir to mix well.
- In a separate bowl, whisk together the maple syrup, melted coconut oil, vanilla extract, ground cinnamon, and salt until well combined.
- Pour the wet mixture over the dry ingredients in the large bowl. Stir thoroughly to ensure that the dry ingredients are evenly coated with the syrup mixture.
- Spread the granola mixture evenly onto the prepared baking sheet.
- Bake in the preheated oven for about 35 – 40 minutes, or until the granola turns light golden brown, stirring every 10 minutes for even baking. Keep a close eye on it to prevent burning.
- If you're using dried cranberries or raisins, add them to the granola as soon as you remove it from the oven and stir to combine.
- Allow the granola to cool completely on the baking sheet. It will continue to crisp up as it cools.
