- 1 cup vegan yogurt (such as plain soy or coconut yogurt)
- 1 cucumber, peeled, seeded and grated
- 2 -3 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- ¼ cup chopped fresh dill
- salt and pepper, to taste
Instructions
- In a medium bowl, combine the vegan yogurt, grated cucumber, minced garlic, lemon juice, olive oil, and chopped fresh dill.
- Mix well and season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
