Ingredients

For the brownies

  • 1 ⅓ cup all-purpose flour
  • 1 cup granulated sugar
  • ½ cup cocoa powder
  • ½ teaspoon baking powder
  • ½ cup plant-based milk
  • ½ cup vegetable oil
  • ½ cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • ½ cup vegan chocolate chips
  • ¼ teaspoon salt

For the raspberry truffle layer

  • ½ cup raspberry jam (seedless is best)
  • cup sugar
  • 1 cup vegan dark chocolate, chopped
  • ½ cup coconut milk
  • cup coconut oil
  • pinch of salt

Instructions

  • Preheat your oven to 350°F (175°C). Grease and line a square baking pan with parchment paper.
  • In a bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt.
  • In another bowl mix the vegetable oil, plant-base milk, applesauce, and vanilla extract. Mix until well combined.
  • Add the wet ingredients to the dry ingredients and stir until combined. Don't over mix. Fold in the vegan chocolate chips.
  • Pour the brownie batter into the prepared pan and spread it evenly.
  • Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Allow it to cool completely.
