  • 1 ½ cups peeled, cored, and finely diced apples (about 2 medium-sized apples)
  • ½ cup rolled oats (optional)
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  1. I am not vegan, but I have done a minimal amount of vegan baking. I’m wondering if you could substitute applesauce for the flax egg to impart more apple flavor into the cookie?
