  • 1 pint cherry tomatoes, halved
  • 1 medium cucumber, seeded and diced
  • ¼ medium red onion, thinly sliced
  • 1 shallot finely diced
  • 1 ½ cups cooked chickpeas (if canned – drain)
  • cup chopped fresh parsley
  • ¼ cup chopped fresh tarragon leaves
  • ¼ cup chopped fresh chives
  • ½ cup vegan feta cheese, crumbled (optional)

For the dressing:

  • ¼ cup extra virgin olive oil
  • 3 tablespoons balsamic vinegar (alternative options: apple cider vinegar, coconut vinegar, lemon juice)
  • 1 teaspoon Dijon mustard
