Ingredients
  

  • 1 cup dried red lentils
  • 2 cups water
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, grated
  • 1 cup gluten free rolled oats
  • 2 tablespoons ground flaxseed
  • 3 tablespoons water
  • 4 tablespoons nutritional yeast (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • pinch of cayenne (optional)
  • salt and pepper, to taste
  • oil for frying (olive oil or other vegetable oil)

Instructions
 

  • Rinse the red lentils under cold water and drain them.
  • In a medium saucepan, combine the red lentils and water. Bring to a boil over high heat, then reduce the heat to low and simmer, covered, for about 15-20 minutes, or until the lentils are tender and the liquid is absorbed. Remove from heat and let cool slightly.
  • In a small bowl, mix together the ground flaxseed and 3 tablespoons of water. Let it sit for about 5 minutes to thicken and form a flax "egg." Set aside.
  • In a skillet, sauté chopped onion for 2 -3 minutes in a tablespoon of oil. Add carrot and garlic and sauté for 2 more minutes. Set aside.
