Black Bean Salsa
Ingredients
- 1 15 oz can black beans, drained and rinsed
- 1 ½ cups corn (frozen, fresh, canned – drained and rinsed)
- 1 large tomato, diced
- 1 small red onion, diced
- 1 jalapeno, seeded and finely chopped (optional)
- ¼ cup fresh cilantro, chopped
- 2 tablespoon olive oil
- 2 tablespoons lime juice or juice of one lime
- 1 teaspoon cumin (optional)
- salt and pepper to taste
Instructions
- In a large bowl, mix together the black beans, corn, tomato, red onion, jalapeno and cilantro.
- Squeeze the juice of one lime and olive oil over the mixture and stir to combine.
- Season with salt and pepper to taste.
- Serve immediately, or cover and refrigerate until ready to serve.
