Ingredients

  • 1 15 oz can black beans, drained and rinsed
  • 1 ½ cups corn (frozen, fresh, canned – drained and rinsed)
  • 1 large tomato, diced
  • 1 small red onion, diced
  • 1 jalapeno, seeded and finely chopped (optional)
  • ¼ cup fresh cilantro, chopped
  • 2 tablespoon olive oil
  • 2 tablespoons lime juice or juice of one lime
  • 1 teaspoon cumin (optional)
  • salt and pepper to taste

Instructions

  • In a large bowl, mix together the black beans, corn, tomato, red onion, jalapeno and cilantro.
  • Squeeze the juice of one lime and olive oil over the mixture and stir to combine.
  • Season with salt and pepper to taste.
  • Serve immediately, or cover and refrigerate until ready to serve.

Notes

Note: For a smoky flavor add 1/3 teaspoon of smoked paprika or liquid smoke to the recipe.
