STORAGE
Raw vegan energy balls can be stored in an airtight container in the refrigerator for up to 2 weeks. They can also be frozen for longer storage, up to 3 months. If freezing, it’s best to store them in a single layer in an airtight container or freezer bag to prevent them from sticking together. When ready to eat, allow them to thaw in the refrigerator for a few hours before consuming.

Raw Vegan Energy Balls
Ingredients
- 1 cup dates
- 1 cup nuts (almonds, cashews, or walnuts)
- 1/2 cup shredded coconut
- 2 tablespoons cocoa powder
- 1 tablespoon chia seeds
- 1 tablespoon coconut oil
- 1 teaspoon vanilla extract
- pinch of salt
Instructions
- In a food processor, blend the nuts until they are finely chopped.
- Add the dates, cocoa powder, chia seeds, coconut oil, vanilla extract, and salt to the food processor. Blend until everything is mixed together.
- Roll the mixture into small balls.
- Roll the balls in the shredded coconut until they are coated.
- Place the energy balls on a baking sheet and refrigerate for at least 30 minutes before serving.
