Strawberry Asparagus Salad
Ingredients
- 1 bunch asparagus, (makes about 2 cups) trimmed and cut into 1- inch pieces
- 2 cups fresh strawberries, sliced
- 4 cups mixed baby greens
- 1/2 red onion, diced or thinly sliced
- 3/4 cup chopped pecans (or other nuts -walnuts, almonds)
- 1/2 cup vegan feta, crumbled (optional)
Balsamic Dressing
- 1/8 cup olive oil
- 1/4 cup balsamic vinegar
- 3 tablespoons maple syrup (or to taste)
- 1 teaspoon Dijon mustard
- 1/4 teaspoon garlic granuales
- 1/4 teaspoon salt, or to taste
- 1 teaspoon coconut aminos (optional)
Instructions
- Trim the woody bottom part of asparagus off. Then cut into 1-inch pieces. Blanch asparagus in boiling water for 2 -3 minutes, then transfer to ice water. Drain well.
- Whisk together olive oil, balsamic vinegar, maple syrup, Dijon mustard, garlic granules, salt, (and coconut aminos, if using) until smooth.
- In a large bowl, combine greens, asparagus, strawberries, red onion, and nuts.
- Drizzle with dressing, toss gently, and top with vegan feta, if using.
