Ingredients

  • 2.5 lbs. red potatoes, washed and cubed (peeled or unpeeled depending on preference)
  • ½ cup vegan mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon hot sauce (optional)
  • 1 teaspoon maple syrup or agave
  • salt and pepper, to taste
  • 1 – 2 celery stalks, finely chopped
  • cup red onion, finely chopped
  • 3 green onions, thinly sliced
  • ¼ cup fresh parsley, chopped (for garnish)

Instructions

  • Place the cubed potatoes in a pot, cover with water, and add a pinch of salt. Boil until the potatoes are fork-tender. Drain and let them cool.
  • In a large bowl, mix together the vegan mayonnaise, Dijon mustard, Cajun seasoning, paprika, garlic powder, onion powder, salt, and black pepper. Adjust seasoning to taste.
  • Add the cooled potatoes to the bowl with the dressing. Gently toss until the potatoes are well coated.
  • Fold in the chopped celery, diced red and green bell peppers, and sliced green onions. Mix until all ingredients are evenly distributed.
