Ingredients
- 4 large tortillas
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small red onion, sliced
- ¼ cup corn kernels, frozen or fresh (optional)
- 1 tablespoon olive oil
- 1 teaspoon cumin
- ½ teaspoon smoked paprika
- ¼ teaspoon garlic powder
- salt and pepper
- 1 cup vegan cheese, shredded
Instructions
- Preheat a large skillet over medium-high heat.
- Add olive oil, sliced bell peppers and red onion. Cook for 5-7 minutes until the veggies are tender. If using corn kernels, add them to the vegetable mixture for the last minute to warm.
- Add cumin, smoked paprika, garlic powder, salt and pepper. Stir well.
- Remove from heat and set aside.
- Heat another skillet over medium-high heat.
- Add one tortilla and cook for 1-2 minutes until it starts to brown.
- Flip over the tortilla and sprinkle 1/4 cup of vegan cheese on half of it.
- Add 1/4 of the cooked veggies on top of the cheese.
- Fold the tortilla in half and press down with a spatula.
- Cook for another 1-2 minutes until the cheese is melted and the tortilla is crispy.
- Repeat with remaining tortillas and filling.
