Vegan Strawberry Banana Bread
Ingredients
- 2 cups all-purpose four
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup cane sugar
- 1 tablespoon ground flax seed
- 3 tablespoons water (for flax seed egg)
- 1 tablespoon cornstarch
- 3 large ripe bananas, mashed
- 1/2 cup unsweetened plant-based milk (coconut, soy, almond milk)
- 1/2 cup cocunut oil
- 2 teaspoons vanilla extract
- 1 tablespoon lemon juice
- 1 cup fresh strawberries, diced
- 1/4 teaspoon salt
Strawberry Glaze
- 1 1/2 cups powdered sugar
- 2 tablespoons strawberry puree (strained to remove seeds)
- 1 teaspoon lemon juice
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
- In a small bowl or cup mix ground flax seed and water. Set aside.
- In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, and sugar.
- In a separate bowl, mash bananas. Then whisk together the plant milk, oil, applesauce, vanilla, flaxseed egg, and lemon juice.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the strawberries.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
Strawberry Glaze (Optional)
- Combine and whisk powdered sugar. strawberry puree, and lemon juice, in a bowl.
- Check the thickness, as it should flow off the spoon like maple syrup. Adjust thickness. Whisk in 1 tablespoon of powder sugar if too thin, or add a tiny splash of lemon juice if too thick.
- Drizzle over the cooled loaf.
