Recipe Notes:

  • Whisk tahini and lemon first: It will thicken at first—this is normal and helps create a smooth base
  • Thin gradually: Add warm water a little at a time until the dressing reaches a creamy, pourable consistency
  • Use fresh lemon juice: Freshly squeezed lemon gives the best bright, balanced flavor
  • Adjust to taste: Add more lemon for brightness or a touch more maple for a softer, slightly sweeter finish
  • Stir before serving: Tahini dressing can thicken as it sits, so give it a quick stir and add a splash of water if needed
  • Customize easily: Add garlic, smoked paprika, cumin, or fresh herbs to change the flavor depending on what you’re serving

Recipe FAQs

How do I make tahini dressing thinner?

Add warm water a little at a time until you reach a pourable consistency. You can also add a bit more lemon juice for extra brightness.

Can I use bottled lemon juice?

Fresh lemon juice is recommended for the best flavor, but bottled can be used in a pinch.

Why does my tahini dressing taste bitter?

Some tahini brands can be more bitter than others. Adding a little more lemon juice or a touch of maple syrup can help balance the flavor.

Can I make tahini dressing without oil?

Yes, you can omit the oil. The tahini already provides richness, and the dressing will still be creamy and flavorful.

Planning Ahead Tips:

This tahini dressing can be made ahead and stored in the refrigerator for up to 4–5 days. Before serving, give it a quick stir and add a little water or lemon juice if needed to bring it back to a smooth, pourable consistency.

This dressing is perfect for meal prep. Keep a batch in the refrigerator to drizzle over salads, grain bowls, roasted vegetables, or wraps throughout the week for quick, flavorful meals.

Freezing is not recommended, as the texture can become grainy or separate after thawing. For best results, store in the refrigerator and use within a few days.

Editor’s Note

Tahini Dressing is probably one of my favorite dressings. This is a basic recipe, and it’s wonderful as-is. But I love tweaking things and experimenting, so I often take this recipe and add a little of this or that. My favorite add-ins are Coconut aminos for a richer deeper taste, coconut vinegar for a creamy vinaigrette taste, or a bit of cayenne and more sweetener for a spicy and sweet flavor.

One of the best things to do after mastering a recipe, is to experiment with it. Start with small amounts and always taste as you go.
