Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 – 3 cloves garlic, minced
  • 1 red bell, chopped
  • 1 15 oz can black beans, drained and rinsed
  • 1 15 oz can kidney beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika or smoked paprika (optional)
  • ¼ teaspoon oregano
  • salt and pepper to taste
  • 6 large flour tortillas
  • 1 cup cooked rice
  • 1 avocado, sliced
  • fresh cilantro, chopped

Instructions

  • In a large skillet over medium heat, add the olive oil and sauté onion and garlic until softened.
  • Add the bell peppers, black beans, kidney beans, diced tomatoes, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for 10-12 minutes, stirring occasionally.
  • Warm the tortillas in a microwave or in a dry skillet over medium heat for 20-30 seconds.
  • Place a scoop of rice on each tortilla, followed by a scoop of the chile mixture. Top with avocado slices and chopped cilantro.
