- Tortilla chips or tortilla strips (classic!)
- Crumbled baked tortillas
- Roasted pepitas (pumpkin seeds)
Creamy Additions
- Sliced or diced avocado
- Guacamole
- A dollop of vegan sour cream or coconut yogurt (homemade cashew sour cream or tofu sour cream)
- Vegan cheese shreds (cheddar or pepper jack)
- Nacho Cheese Sauce
Fresh + Bright
- Fresh cilantro or cilantro sauce
- Lime wedges or a squeeze of lime juice
- Chopped green onions
- Diced red onion
- Fresh jalapeño slices
Extra Flavor Boosts
- Hot sauce (cholula, tabasco, or chipotle)
- Pickled jalapeños
- Salsa verde or pico de gallo
- A sprinkle of smoked paprika or chili powder
- Nutritional yeast (adds cheesiness!)

Recipe Notes:
- Sauté the aromatics well – Let the onion, garlic, and jalapeño soften fully before adding spices. This builds a deeper, richer flavor base.
- Bloom the spices – Stir the cumin, smoked paprika, and chili powder into the sautéed veggies for 30–60 seconds. Heating the spices releases their oils and enhances the soup’s smoky Tex-Mex flavor.
- Adjust the heat level to your taste – Remove the jalapeño seeds for mild heat, leave them in for spicy, or add a pinch of chipotle powder for smoky heat.
- Simmer long enough to blend flavors – Although the soup cooks quickly, letting it simmer the full 12–15 minutes helps the spices and beans meld together.
- Brighten the soup with lime – Don’t skip the lime juice. The acidity balances the richness and lifts all the flavors.
- Customize your toppings – Tortilla chips, avocado, cilantro, vegan cheese, green onions, or a spoonful of vegan sour cream add texture and personality to each bowl.
Recipe FAQs
Is this soup gluten-free?
Yes, the soup itself is naturally gluten-free. Just be sure your tortilla chips and toppings are certified gluten-free if needed.
How can I make this soup oil-free?
Simply sauté the onions and garlic in a splash of vegetable broth instead of olive oil. The flavor will still be rich and delicious.
What can I use instead of jalapeño?
You can leave it out completely or replace it with:
- ¼ teaspoon crushed red pepper flakes, or cayenne
- A dash of hot sauce, or adjust to your preferred spice level.
How do I make it spicier?
Add extra chili powder, a second jalapeño, chipotle powder, cayenne, or a splash of hot sauce. Start small and build up.
Can I add more vegetables?
Definitely! This recipe is flexible. Just add them when sautéing the onions. Great additions include:
- Bell peppers
- Diced zucchini
- Chopped spinach or kale
- Diced carrots or squash
How can I make this soup thicker?
Two easy methods:
- Mash ½ cup of the beans before adding them to the pot.
- Simmer the soup an extra 5–10 minutes to reduce the liquid.
Can I use dried black beans instead of canned?
Yes. You’ll need the equivalent to replace the 30 oz. canned beans. This is about 1 1/4 cups of dried beans.

Planning Ahead Tips:
Editor’s Note
I want to mention a low-key but essential ingredient: the broth. Yes, that is right, the broth. If you meal prep or batch cook for the freezer, do not underestimate the power of a high-quality base.
You can truly level up any soup recipe by using a good home-made broth to create those underlying richer flavors that define a professional-grade meal. If you can’t make the broth yourself, then find a quality brand that stands out; don’t skimp in this area.
