Ingredients
  

  • 4 large tortillas
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small red onion, sliced
  • 1/4 cup corn kernels, frozen or fresh (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • salt and pepper
  • 1 cup vegan cheese, shredded

Instructions
 

  • Preheat a large skillet over medium-high heat.
  • Add olive oil, sliced bell peppers and red onion. Cook for 5-7 minutes until the veggies are tender. If using corn kernels, add them to the vegetable mixture for the last minute to warm.
  • Add cumin, smoked paprika, garlic powder, salt and pepper. Stir well.
  • Remove from heat and set aside.
  • Heat another skillet over medium-high heat.
  • Add one tortilla and cook for 1-2 minutes until it starts to brown.
  • Flip over the tortilla and sprinkle 1/4 cup of vegan cheese on half of it.
  • Add 1/4 of the cooked veggies on top of the cheese.
  • Fold the tortilla in half and press down with a spatula.
  • Cook for another 1-2 minutes until the cheese is melted and the tortilla is crispy.
  • Repeat with remaining tortillas and filling.
